These little tea sandwiches are not only pretty to look at,
but they are so refreshing on a hot summer's day
Shave long strips of cucumber

with a regular vegetable peeler.

Spread some of your favorite cream cheese
on your favorite sandwich bread
{ we used Pepperidge Farm's Very Thin bread slices

Lay out cucumber on the bread, slightly overlapping it

Cut off crusts
and cut to desired shape.

Sprinkle with kosher salt and fresh pepper

OMG - that is the most elegant cucumber sandwich I've ever seen. I want to make some NOW.
The look great and I know they taste really good! Going to school in Louisville, many kids took Benedictine sandwiches for lunch. The filling was green and delicious! Same thing, more or less.
