Salsa your way through Monday....

with some yummy
Fiesta Salsa

1/4 cup rice vinegar
1tbsp olive oil
1 jalapeno, minced
1 clove garlic, minced
1/2 tsp chili powder
1/2 tsp cumin
1/4 tsp hot pepper sauce
1 16oz can black beans, rinsed
1 cup frozen corn, thawed
1 cup red pepper, diced
1/4 cup finely chopped red onion
2 tbsp chopped cilantro

Mix together first 7 ingredients. 
Pour onto the remaining ingredients and stir gently until combined. 
Serves 6.

let's just say there was a lot of chopping!

This will be a delicious way to top some grilled chicken breasts! Yummy!! I LOVE corn!!!!!

Just happens that I tasted that salsa a couple of weeks ago at a meeting. Yummy yummy stuff! And I bet it would be great with grilled chicken. Thanks so much for stopping by my blog.
