It's a Blueberry Day



 Today we whipped up a de-licious
Lemony Blueberry Scone Mix

 
The snow...it's blowing
The cold...is showing
8 degrees...
 
You should really make this mix 
and share with friends please!
 
Lemony Blueberry Scone Mix
2 cups all-purpose flour
1/3 cup sugar
1/4 cup powdered milk or powdered non-dairy creamer
2 teaspoons baking powder
1 teaspoon lemon zest
1/4 teaspoon salt
1/3 cup shortening
1 cup dried blueberries
 
In a large bowl, mix together flour, sugar, powdered milk or creamer, baking powder, zest and salt.
 
Cut in shortening with a pastry blender until mixture resembles coarse crumbs; stir in berries. 
Place mixture in a one-quart plastic zipping bag. 
 
Seal tightly; attach these instructions:
 
Whisk together one egg and 1/4 cup water in a large bowl. 
Add scone mix; stir just until moistened.
Knead for 12-15 strokes. 
Take a scoop and place the mixture onto a parchment paper covered cookie sheet. 
Sprinkle with some sugar. 
Bake at 400 degrees for 12-15 minutes or until golden. 
Serve warm.  Makes 10 scones.

 
If you're up for it...
make a simple honey butter to put on those scones!
 
Just take some softened butter
and add your favorite honey...
