Chicken, Potato & Spinach Soup

5 cups potatoes, washed, unpeeled
and cut into 1-1/2 inch cubes
1-1/2 quarts chicken broth
1 quart milk
1-1/2 cups flour
2 teaspoons onion powder
1-10 oz. package frozen spinach
1-11/2 cups cooked, cubed chicken breast
Salt & Freshly Ground Black Pepper
Put potatoes in a pot and cover with chicken broth.
Bring to a boil.
Reduce heat and simmer until potatoes are tender.
In the meantime, heat milk in another pot.
Melt butter in a frying pan and whisk in the flour
and onion powder, cooking a minute or two to make a roux.
Slowly whisk 1 cup of warm milk into the roux,
whisking to keep it smooth.
Then whisk the roux into the rest of the warm milk
and cook, whisking constantly, making a thick white sauce.
When potatoes are tender, stir white sauce into the pot
with potatoes and chicken broth.
Add spinach and cooked chicken.
Add salt and ground black pepper to taste
Garnish with croutons and Parmesan cheese.
Makes approximately 4 quarts.
