Take some, and cool off!

For one of our Tea Parties we made champagne salad... one of Grandma Betty's much requested recipes. It's oh so creamy, cold & good - the perfect desert for summer~and of course we knew you'd need the recipe!



Champagne Salad (original recipe)
8oz. cream cheese, softened
3/4 cup sugar
2 cans of drained crushed pineapple
2 bananas, sliced
10 oz package sliced, frozen strawberries, thawed
8-oz package cool whip, thawed

Beat the cream cheese and sugar together
Fold in the cans of drained crushed pineapple, bananas, 10-ounce package sliced frozen strawberries, thawed Cool Whip.
Then freeze till sets or use.

Can use fresh strawberries, about 1 quart, sliced.

Adapted Recipe:
Instead of bananas, we used (fresh or) frozen blueberries and (or) raspberries.
For sauce topping we took left over strawberries, blueberries & raspberries and added sugar and lemon juice to taste. Refrigerated this overnight and the spooned on top immediately before serving.

That sounds delish! I'll have to ask Clara to make it and invite me over...my husband will not eat anything with cream cheese or cheese at all...(no, he's not allergic, just "high maintenance"!) and my Son is not big in desserts so if I make it, my Daughter and I will eat it all!!!! I'll make sure Clara gets the recipe....
