This weekend was a canning frenzy! We had so many peppers that a friend gave us that we just had to come up with something for them.....so off to the farm market for some plump Roma tomatoes for salsa.
Then we went to the grocery store and loaded up on some wonderful cilantro - oh how we love cilantro!
Then there were all of the peppers! We made the most delicious salsa - here's one of the recipes we made (just in case you have a lot of peppers to unload!!)
JALAPENO SALSA
3 cups chopped, peeled, cored tomatoes (we used Roma tomatoes because they are meatier!)
3 cups chopped jalapeno peppers
1 cup chopped onion
6 cloves garlic, minced
2 tablespoons minced cilantro
2 teaspoons oregano
1 1/2 teaspoons salt
1/2 teaspoon cumin
1 cup cider vinegar
Combine all ingredients in a large sauce pot. Bring mixture to a boil. Reduce heat and simmer 10 minutes. Ladle hot salsa into hot jars, leaving 1/4-inch head space. Adjust two-piece caps. Process 15 minutes in a boiling-water canner.
Yield: about 3 pints
Note: when cutting or seeding hot peppers, wear rubber gloves to prevent hands from being burned.

You've been busy! I only can peaches. I wanted to grow a salsa garden this year but never got around to it. May be next year!
Mmm, will you drop a jar off at our house? I've been debating if I want to take the time to make some. We like ours with a tiny bit of sweetness to it :)

I don't know what it is about canning that causes me to have a panic attack. I used to do that with my mom all the time.
When I grew older and moved out on my own I never canned again. I'm afraid to do it as I just always followed mom's direction and never really latched onto it.
However, not 'til I saw this salsa have I ever wanted to get with it and do it... Thank you for the vote of confidence as I think I can, I think I can. This sounds so yummy don't ya know!!!
