Minted Watermelon & Fennel Salad
Baby Greens...fresh from the garden
Fresh Mint chopped ~ 2 tablespoons or more
{depending on your taste}
Watermelon cut in 1" cubes
Fennel Bulb, sliced
2 tablespoons olive oil
1 tablespoons white wine vinegar
1/4 teaspoon pepper
MIX
You might want to make a double batch of your
oil, vinegar & pepper
depending on how much salad you make :)

That looks so good and I love anything with mint.Thank you for sharing this recipe.I am going to try it.I have mint and down here in Mississippi...we have plenty of water melon.
