1 Tomato, 2 Tomato, 3 Tomato, MORE!


It's Shadow Shot Sunday...our favorite part of the week where we search out shadows in our neck of the woods!
This week the tomatoes are on!
(as well as the shadows!)
And...we are finding all sorts of recipes to use all of this delicious fruit up!
Yesterday at our Birthday Tea Party we used some Roma tomatoes to make this:

All you need for these yummy Pimento Cheese Stuffed Tomatoes is:

Pimento Cheese
4 cusp shredded sharp cheddar cheese
4oz. chopped pimentos
8oz. cream cheese, softened
A couple dashes of hot sauce
1/4 cup mayonnaise
1 onion, chopped

24 tomatoes
(washed, slice a little bit of the bottoms off of the tomato, so they can sit upright, then slice top off & scoop out seeds)
Mix it all together and stuff the tomatoes with the Pimento Cheese mixture

We haven't had much luck with our potted tomatoes this year. Happily, the sweet fruit that has lacked quantity are as delicious as ever! I think a mozzarella salad with fresh tomatoes and basil is in the cards...

Pimento cheese tomatoes look wonderful! Sweet and savory this appetizer (or lunch)!

Cool shadows; yummy looking tomatoes.

And we just can't grow big tomatoes like that here (had some luck with smaller varieties--pears, sungolds, etc.) because it never gets warm enough long enough for them to ripen.

The tomatoes look scrumptious! I love the red and green colors together with the shadows. Very nice! I think I'll try that recipe out. Yum!!

Great shadows, and yummy tomatoes. One of my favourite things to eat in the summer, nothing like home-grown tomatoes.

Mmmmm...yummy...I'm afraid the monsoon season here in Iowa drowned out my beautiful tomato plants. They got mildew, root rot, insects and had no taste...but it was great weather for the hosta and my peas...ha!

Yum! Way to go with the pimento cheese. Can't believe I've never stuffed tomatoes with it! Your tomatoes look great!
